Day 1: Paleo Pumpkin Bars
Today we made paleo pumpkin bars from scratch. I thought it would be an appropriate thing to make for fall. It was way easier than I thought it would be! Besides the plethora of ingredients, the directions were really simple.
To make it paleo, the recipe calls for coconut flour, almond flour, and flax meal in leu of white flour and dates in leu of cane sugar. This adds fiber and is a more natural way to bake, since it the flour substitutes are simply ground ingredients (nothing refined). All the ingredients are organic.
It was actually fun working together to bake something and different since I was more in charge than I do when cooking with my mom. I also got practice cooking from a recipe because usually what I cook is from what I can remember seeing my mom do or whatever idea might I have. While it takes away some of the creativity of cooking without a recipe, it certainly adds more confidence in the outcome of my concoction. And trust me, the outcome was delicious!
