Reflection #2

During the second week of Twenty percent time my partner and I decided to make a breakfast pudding. Since we're following paleo guidelines we decided to make chia coconut pudding. After much research and argument attempted in class, we decided to go along with this recipe because it is simple, easy, and healthy! This recipe was fairly simple and we plan to go onto more complicated dishes as this project progresses. The one problem that we will face is the cost associated with the produce needed to complete some dishes. Anyways, for the chia pudding, we simply poured ingredients together, let it still for 15 minutes, and then stirred it. The chia pudding was then placed into the fridge for it to rest overnight. What i learned by making this dish was that you can substitute dairy with coconut milk because it has healthy fats and it doesn't contain lactose so its not inflammatory. In addition, the chia seeds absorb whatever liquid they're in and become gelatinous. This is an important concept many dieticians incorporate. Overall, i felt pretty content with my contribution to this weeks project. I am slowly getting used to the procedures and things that you have to take into consideration when it comes to designing and making these foods.

  1. Great reflection! That is cool that you decided to work with a partner. Are you just making general recipes or specifically paleo ones? I also read your partners update and it seems like it was interesting to see how it all combined to make the pudding. Did you taste it?
