Yesterday Mickey and I used my mom's recipe for Paleo banana bread and made muffins. The recipe calls for almond flour and coconut crystals in leu of refined white flour and cane sugar. This makes it paleo becaus all the ingredients are organic and unrefined. It's also relatively low carb.

My favorite way to eat these banana muffins is with plain yogurt or with clarified butter.
