Reflection #7

This week my partner and I made paleo breakfast muffins. They were made with meatloaf and eggs in it. In addition, there was bacon in it. How delightful ! Pretty much we made a typical american breakfast in a single yummy treat. Since, we used almond flour (an essential substitute in the paleo diet) it held all the other ingredients together and made it low-carb. What fascinates me is how this usually "unhealthy" breakfast can be made into a nutritious meal. What changed it was the almond flour and that every produce used was organic. What I learned this week is that bacon is healthy. There is a common misconception that it is bad for you, however, all the bad fats are stored in hormones and non-grass fed meats but this one is organic therefore contains only healthy ones! A challenge we faced while preparing this dish was coming across the meatloaf crust. It was difficult making it in tact and making it fluffy and delicious in the end. Almond flour os the way to go and it makes baking easy and healthy!
